Research Goals
The primary objective of this test is to evaluate the sensory differences between the two products (Trial 6 and Trial 7) through a neurosensory analysis involving the senses of smell and taste.
- To investigate consumers’ subjective preference regarding the two products.
- To evaluate whether the cocoa notes emerge and leave a lasting impression on the consumer’s mind.
- To investigate the perceived quality of the two products.
- To identify the positive and negative notes.
Test Flow
All participants completed two tastings.
Each tasting was divided into two phases: SMELL and TASTE.
Following each session, participants answered in-depth post-test questions, during which NEUROPHYSIOLOGICAL data were recorded.
